Tuesdays don't just have to be for tacos, although you'll never see me turn down a Taco Tuesday. Yesterday I was feeling inspired so I made a lemon Rosemary roasted chicken, roasted brussel sprouts (over cooked-- fail) and mashed cauliflower. Quite the nice Tuesday nigh dinner I have to say. And a loaf Semifreddi's bread always helps.
Boiled Cauliflower and garlic. Mashed with Greek yogurt, goat cheese and chives.
The brussels before I ruined them. No wonder they get a bad name!

YUM!!! I have always wanted to roast a Chicken...but bones in meat scare me - I can't do it! But that looks delish!

That meal looks fantastic! I had brussels last night for dinner (Trader Joe's has these ones that you microwave but I sautee with olive oil - fool proof) and I make a similar cauliflower mash which is my fave. Thanks for the idea to use greek yogurt! Brilliant!

I basted the chicken often with it's own juices, then drained all the fat out after.
