Things I Love: Taco Tuesday

If you hadn't noticed, I love reasons to celebrate. And if a summer Tuesday evening isn't good enough, how about my four year anniversary of my last night of being a single lady? After my Mom's friend Debbie sent over a plethora of peppers and squash from her garden, I decided it would be a taco (or fajita) Tuesday! Fresh fruits and veggies inspire me. And we had a nice mellow night of local foods and baseball. I love summer nights...
I started with mango smoothies, simply purred mango and fresh lime juice. Served in my vintage champagne coupes and enjoyed poolside.
I bet this would have made an awesome margarita!
Fresh squash and peppers straight from the garden!
Chicken fajitas for Casey.
And squash fajitas for me.
Served with mango and black bean salad, fresh guac and Greek yogurt.
Yay for garden veggies, mellow nights and simple reasons to be happy!
What is your favorite way to spend a summer night?

  1. ohhh squash fajitas never would have thought of that! thanks for sharing :)

  2. YUM!!! Everything looks Delicious!

My favorite way to spend a summer night is on a beach, after a hot sunbathing day, watching a beautiful sunset. Perfect...

  3. Tonight is fajitas night in my house!!! working late and a hair appointment pushed it back a day! But yes relaxing nights at home are the best!!!

  4. Taco Tuesdays are fabulous! Last night I celebrated (nothing in particular) at a restaurant by my with $2 margaritas, the only way to spend a Tuesday!

  5. I love Taco Tuesdays! We also had tacos last night. I could never get sick of eating tacos.

  6. Delicious looking meal and I really like your champagne coupes. My favorite summer evening is a crawfish boil. It's a meal and social event all in one!

  7. Lauren now that sounds amazing!! Can I come over?
