If you follow me on Twitter or Facebook you may have seen that I was making Martha Stewart's twice baked squash for dinner. It was a really fun dish to make and plate but the flavor wasn't my favorite. I followed Martha's recipe and found it a bit plain so I added some roasted garlic. I would like to play around with the flavors a it more but I think this could a really wonderful Thanksgiving side. The presentation would perfect for impressing family.
After baking the first time, I used a melon baller to scoop out the insides.

The consistency was almost like a savory pie.
Casey said it reminded him of the soup, he seemed to like it.
I am looking forward to having leftovers today and re-evaluating the flavors.
